Treesee's Favorite Recipes
Treesee’s Tex –Mex Meatloaf (w/Garden Zucchini)
1 cup of grated fresh zucchini- pat on paper towels to release any moisture
1 ½ pounds of lean ground round ( if using Extra lean diet ground round add 2 teaspoons of a quality healthy oil, like coconut oil.
½ cup dried bread crumbs
1 Jalapeno pepper, sliced fine then finely chopped
1 small sweet pepper, I like to use the Sweet Red or Yellow to add color)
2 tablespoons of chopped onion. Sweet Red (if like more onion add ¼ cup)
½ cup tomato juice
½ to ¾ cups of cilantro leaves –
¼ teaspoon of each – Italian seasoning and cumin
½ tsp of chili powder
Pepper to taste
Beat egg in large mixing bowl; add seasonings, bread crumbs and vegetables. Mix well. Add tomato juice. Mix again. Add crumbled ground round. Mix well with large fork making sure all ingredients are well blended. Pack into loaf pan.
Bake at 350 degrees for 45 min. Drain if necessary. Bake another 30 until juices run clear and done in the middle. Let set for at least 15 min for juices to set. Slice and serve
